Welcome to the HealthBuddy Recipe blog! Today I’m excited to share this recipe from my wife Hayley and the far reaches of New Zealand! I know the name “brown rice salad” doesn’t fill you with excitement and joy, but trust me, this dish is amazing! Whether you have this as an independent dish or as a small side dish with baked fish or grilled chicken, this dish will become one of your favorites from now on!
Ingredients (12 servings)
To make this delicious brown rice salad, you need the following ingredients:
- 2 cups x uncooked brown rice
- 3 and a half cups x water
- 1/2 cup x dark soy sauce
- 1 x red onion, chopped
- 2 x red peppers, chopped into small cubes
- 6 x spring onions, chopped
- 1/2 cup each x sunflower, pumpkin and sesame seeds
- Dressing:
- 1/2 cup x olive oil
- 4 tbsp x lemon juice
- 2 tsp x lemon peel
- 2 x crushed garlic cloves
- 2 tsp x grated fresh ginger root
- 2 x tsp x honey
Method
Make brown rice salad by following these simple instructions:
- Preparation:
- Wash and chop all the ingredients as described above
- Cooking:
- Rinse the rice in cold water, then place in unsalted water in a tightly covered pot and cook for 45 minutes or until the rice is cooked and all the water has been absorbed.
- Add soy sauce and chopped onion to the still hot cooked rice, mix well and let it cool for at least 2 hours or in the fridge overnight.
- Combine the sunflower seeds, pumpkin seeds, and sesame seeds and toss them in 1 teaspoon olive oil and cook in a heavy skillet over low heat, shaking occasionally, for 5-10 minutes (they’re ready when the pumpkin seeds look plump). Remove from heat and let cool.
- Measure all sauce ingredients into a screw-top jar or food processor and process or shake well to mix.
- Final steps:
- A little before serving, add the remaining ingredients, seeds and sauce to the rice and mix well.
- Any leftover salad can be stored in the refrigerator and used over the next few days, with relatively little loss of quality.
