To put things in perspective, after I graduated from Weequahik High School and before attending Seton Hall University, I worked a part-time job as a butcher. I work as a delivery boy and occasionally need to go to the slaughterhouse to pick up orders for the store. Needless to say, I was unaware and unaware, because despite the horrors I witnessed almost daily, change never occurred.
After graduating from Seton Hall University with an accounting degree, I eventually got married and moved to a small town called Livingston. Livingston is basically a yuppie community where everyone is judged by the neighborhood they live in and their income. To say this is a “plastic” community would be an understatement.
Livingston and this shallowness finally got to me. I told my wife I had had enough and wanted to move. She made it clear that she had to be close to her friends and New York City. I finally picked myself up and split up and headed to Colorado.
In late 1974, I was living with a woman in Aspen, and one day she said, “Let’s go vegetarian.” I don’t know what made me say that, but I said, “Okay”! At this point, I went to the refrigerator and took out about $100 worth of frozen bodies to give to a welfare mother who lived behind us. Well, everything was fine for about a week or so, and then the chick broke up with another guy.
So here I am, a vegetarian for a few weeks and really have no idea what to do, how to cook, or basically how to prepare anything. For about a month, I lived on carrot sticks, celery sticks, and yogurt. Fortunately, when I started going vegetarian in 1990, it was a simple and natural process. Anyway, while I was wandering around the town of Aspen, I noticed a little vegetarian restaurant called Little Kitchen.
Let me back up a little bit. It was April 1975, the snow was melting and runoff from Mount Ajax filled the streets knee-deep. Now, Aspen is great for skiing, but when the snow melts, walking is terrible.
I was ready for it to be over and I needed a warm place. I’ll elaborate on this in a minute.
But now, back to the “kitchenette.” Knowing I was about to leave Aspen and essentially become a new vegetarian, I needed help. So, I walked into the restaurant, told them my dilemma, and asked them if they would teach me how to cook. I told them that in return I would wash the dishes and empty their trash. Then they asked me what I did for a living and I told them I was an accountant.
The shop owner said to me: “Let’s make a deal. You file taxes for us and we will feed you.” So, for the next few weeks, I did their tax returns, washed the dishes, took out the trash, and learned as much as I could.
But, like I said, the mud is getting to me. So I picked up a travel book written by a man named Ford. The name of the book is “Hawaii”. Looking through the book, I discovered that there is a vegetarian restaurant in Lahaina, Maui, called Mr. Natural. I decided then and there to go to Lahaina and work at Mr. Natural. Long story short, this is how it happened.
So, I’m working at Mr. Natural, learning everything I can about my new eating lifestyle – and it’s awesome. Each afternoon we would stop for lunch around 1pm and head to the Sheraton Hotel in Kaanapali to play volleyball while someone stayed to prepare dinner.
Since I was new and not very good at cooking, I never thought I would be asked to stay and cook. Well, one afternoon it did happen; it was my turn. This posed a problem for me because I finally figured out how to boil water.
Desperate and clueless, I headed up the creek basically without a paddle. Luckily, a friend of mine was sitting in the restaurant’s gazebo and I asked him if he knew how to cook. He said the only thing he could make were enchiladas. He said his tacos are soy and dairy-free. I told him I had no idea what an enchilada was or what he was talking about, but I needed him to show me because it was my turn to make dinner.
Well, they came back from playing volleyball and someone asked me what was for dinner. I told them about the enchiladas; the owner wasn’t happy. I told him mine was soy and dairy free. When he tried the enchiladas, he said it was incredible. Being a humble person, I smiled and said “you expected less”? It’s apparently so good that it’s the only item on the menu that we offer twice a week. In fact, after about a week, we were selling five dozen a night, we had them on the menu, and people would be walking around Lahaina broadcasting, “Natural’s tacos tonight.” I never have to cook anything else.
A year later, the restaurant closed and I was somehow drawn to a small health food store in Wailuku. I never told anyone I was an accountant and basically demoted myself to a truck driver. The man who ran the health food store had friends in similar businesses and farms on many islands. I told them that if they could organize and form a company, they might be able to lock down the country. That’s when they found out I was an accountant and Down to Earth was born. Down to Earth became the largest natural foods chain on the island and I served as their CFO and co-manager of their largest store for 13 years.
In 1981, I started doing a weekly radio show trying to get people to accept a vegetarian diet and get them away from killing innocent creatures. I still do that show today. I pay for my own airtime and have no sponsor to keep me honest. What’s a little troublesome is that I was forced to get a master’s degree in nutrition to stop all the MD’s who called and asked about my credentials.
Doing this radio show led me through endless research to see the corruption that exists in the big food industry, big pharma, the biotech industry, and government agencies. These messages, while unconscionable, made me realize how broken our health system is. This is covered in more depth in the introduction and throughout the book, and by the time you finish the book it will be clear to you and it will hopefully inspire you to make a change.
In 1989 I left Down to Earth, qualified as a National Sports Injury Massage Therapist, and began traveling the world with a group of people making martial arts movies. After doing this for about four years, I finally returned to Honolulu and got a job as a massage therapist at The Honolulu Club, one of the premier fitness clubs in Hawaii. It was there that I met the love of my life and we have been together since 1998. She made me an offer I couldn’t refuse. She said, “If you want to be with me, you have to stop studying naked women.” So I went back to accounting and spent many years as the CFO of a large construction company.
Back in my days in Newark, when I was a baby, I had no idea what “chicken,” “egg,” “fish,” “pig,” or “cow” were. My dietary blueprint was imposed on me by my parents, just as their dietary blueprint was imposed on them by their parents. By the grace of God, I am able to put things into perspective, improve my health, and elevate my consciousness.
The path I started on in 1975 finally led me to write my book, “Sane Eating in a Mad World.” Hopefully the information contained in this article will inspire, motivate and inspire you to make a different choice. Doing things out of reflex is not always the best choice. My hope is that, with the help of the many friends and characters I have met along the way, you will be able to better understand which road is the best for your travels, not only for your health but for your consciousness as well.
Last but not least: after receiving vaccinations as a child, I developed asthma, which has plagued me throughout my life. In 2007, I was exposed to organosulfur crystals and within three days my asthma was gone and I haven’t had a recurrence in over ten years.
